ingredients
- 1 (15 ounce) can dark red kidney beans
- 1 (15 ounce) can light red kiney beans
- 1 (15 ounce) can black beans
- 1 (15 ounce) can tomato juice
- 1 (15 ounce) can crushed tomatoes
- 1 diced yellow onion
- 2 bay leaves
- 2 tablespoons ground cumin
- 2 tablespoons chili powder
- salt and pepper
- 1⁄4 cup shredded vegan cheese
directions
- Add all ingredients into large stock pot stir well ( I don't drain or rinse any ingredients).
- Cover bring to a boil, let boil for 10 minutes.
- Reduce to a low simmer and cover
- Stir and check taste ( may need extra seasoning ).
- Top with vegan cheese and enjoy.
