  • Mix your dry ingredients reserving about a third of the chocolate chips for topping.
  • Then add the wet ones and stir well.
  • Divide between 12 cake or muffin cases (in a muffin tin is best), topping with the remaining chips. Bake at 200C/400F for 15 to 20 minutes until well risen and browning.

  1. I added 100g of dark chocolate and chips + the cooking water of dates instead of soya milk/water/orange juice and orange juice! 20 min in the oven with 160C and they rised perfectly. Delicious ?

I'm a new vegan so trying out a lot of recipies, and this one was a definite win.<br/><br/>I added a small banana to help bind the mixture, and used half and half soy milk/orange juice (totally a few ml over the minimum suggested here).<br/><br/>I also added a splash of orange extract to just boost the orange flavour a little.<br/><br/>The only change I'd suggest is to perhaps use plain flour rather than wholewheat - there's a slightly 'bready' aftertaste that, while not unpleasant, doesn't really combine with the chocolate flavour.
     
  3. Very good.... and I made quite a few changes, so not sure if this is a fair rating. First off, I was a little confused by the "1/2 - 1 cup liquid" and after making them, wondered if it should state "1 1/2 cups" of liquid? I used about 1/4 cup sugar, as I am always trying to reduce calories/sugar. I was too lazy to zest the oranges, and actually used 2 oranges, juicing them by hand and adding a bit of the pulp after juicing. I think next time, I will take the effort to include the zest as I would have liked them more orange-y. I tried substituting apple sauce for the oil, but it was very very dry, so ended up adding about 1/4 cup oil and a total of about 1 and 1/4 cup soymilk (which is I why I wonder if the recipe should call for 1 1/2 cups?) Next time, I'll include the zest, use orange juice, and start off with more liquid. And I think chopped nuts would be great too! Thanks for a good vegan muffin!
     
  4. One of my favorite flavor combos in a really moist, not too sweet muffin. I used all orange juice for the liquid. The small amount of chocolate chips was just right for a little gooey taste "surprise". :) Made for Winter 2010 Comfort Cafe game.
