Vegan Oaty Pancakes or Waffles (Healthy)

  • In a big bowl combine flours, salt, baking powder, cinnamon, nutmeg, sugar, oats and muesli.
  • In a second bowl combine vanilla soy milk and extract. Add this to the dry ingredients and stir to combine. If youre planning on making pancakes, you might want to add a tad more milk to make the dough more liquid.
  • Allow dough to rest for about 10 minutes to give the baking powder time to start working (this will make for lighter pancakes/waffles).
  • Preheat and oil waffle iron or frying pan/griddle and once they are hot, bake out waffles or pancakes.
  • For a pancakes use about 1/4 cup of batter and flip it once bubbles rise to the top of the dough. Cook until golden.
  • Enjoy.
