Vegan Peach Cobbler (Made With Rice Flour)

  • Preheat oven to 350 degrees.
  • Crust: combine rice flour, butter, stevia, baking powder, xantan gum, salt, and nutmeg in a medium sized bowl. In a small bowl, beat egg replacer, rice milk, and vanilla. Slowly mix wet ingredients into the dry. Set aside.
  • Filling: In a medium sized bowl combine all ingredients except vegan butter plus 2 Tbs water(or juice if canned peaches were used). Place filling in a baking dish and dot with vegan butter.
  • Spoon crust on top layer of peaches.
  • Bake for 35 minutes or until crust is goldenish.

  1. This was delicious. Better than I thought served with plain yogurt on the side. This has a cake like topping. I didn't make ours vegan but it turned out well. I used salted butter instead of the vegan butter, white rice flour, gluten free baking powder, guar gum to be corn free. I replaced the nutmeg with cinnamon because we don't consume intoxicants. I used real eggs and halal vanilla paste! (delicious stuff) Instead of stevia powder in the crust I used about 1/2 cup dark brown demura sugar. For the filling I rinsed canned peach slices, used freshly squeezed lemon juice and extra cinnamon, white sugar in maybe 1/3 cup and sea salt for the salt. Made for Zaar Chef Alphabet Soup Game (Jan - June '10).
