Vegan Pitas (Healthy and Kid-Friendly!)

  • Cook veggie chicken patties (I use the microwave for about two minutes to two and a half minutes for two patties.) Set aside to cool.
  • Dice all vegetables, fruit, and veg chicken patties according to how chunky you want your sandwich and place in a big bowl.
  • Add veganise to the veggies and fruit and mix well. (I usually leave the lettuce and spinach out of the veganaise mix.).
  • Slice the pita bread into halves to make 4 pockets.
  • Warm the bread slightly. This seems to make it a little more elastic when stuffing it. I find about 15-25 seconds in the microwave does the trick.
  • Put chopped lettuce and spinach in the bottom. Add the veggie/fruit mix to the pita pockets and top off with a little more lettuce and spinach.
