- 1 (14 ounce) can coconut milk, high-quality
- 2 g coconut vinegar
- 6 g sugar
- 4 g salt
- 6 g agar-agar
directions
- Whisk all ingredients in a sauce pan until dissolved.
- Turn on heat and increase slowly, allowing it to simmer for 2-3 minutes.
- Remove from heat and pour into a shallow container.
- Allow the mixture to set.
- Once set, purée in a food processor.
- Set aside for 24 hours.
- The coconut milk mixture should begin to weep from vinegar and begin to look like ricotta cheese.
