Vegan Sticky Date Pudding

  • Pre-heat the oven to 190°C-Gas5.
  • Chop the dates in half and put them in a small saucepan and cover with the soya milk and water; simmer until the dates are soft.
  • Take off the heat and stir in the bicarbonate of soda, which will froth as you add it to the date mixture. Leave to cool.
  • Beat together the margarine and sugar until pale and creamy.
  • Add the date mixture and stir.
  • Mix the spices into the flour. Sieve the flour and fold into the sponge mixture.
  • Spoon the sponge mixture into a 20cm x 20cm tin.
  • Bake in the preheated oven for 30 minutes or until cooked and the sponge bounces back when pressed.
  • To make the sauce: melt the syrup, margarine, sugar and vanilla essence in a small saucepan; simmer for 5 minutes without stirring.
  • Prick the pudding all over and pour half the hot toffee sauce over the pudding. Serve the rest of the sauce with the pudding.
  • It freezes well, cut into individual servings and place in the freezer. Defrost in the microwave for 2 minutes.

  1. This is 'Oh My God' Good! And quick and simple. I can't use vegan butter or marj (I need very low Sat. fat) but I was able to modify it to be an amazing sticky date as good as any other. I drizzled a small amount of olive oil in place of the margarine for some moisture in the cake, and made the sauce to recipe but substituted the margarine for Soy milk. It didn't thicken (naturally) as much as a standard caramel sauce but I got it up to boil then off the heat which made it did thicken enough to become a sticky & luscious sauce. I did pour it over cake to help with any dryness and it was perfect!! Thank you for such a great recipe, I'll be showing this off and noone will ever suspect it's vegan!
     
  2. Oh my god this was so amazing!!! It did not stay long in my house at all!! My dad who is the furthest thing from vegan claims its the best 'cake' he's ever eaten. Its got a lovely texture- very moist yet soft and fluffy- and the flavour of the dates and the spices really make it come alive. I agree with Sabavana- dont pour the sauce over the pudding- it makes the crust sickly sweet and ruins the texture of the pudding! Also, I only used about half of the sauce mixture- and it was PLENTY. This is hands down the best sticky date pudding ive ever tried- I would highly recommend pairing it with some soy icecream! I will be making this again for sure!
     
  3. Absolutely delicious! My hubby was worried it would be too sweet, as he is generally not a fan of SDP because of this. But we both loved it, and it was so easy to make that I'll definitely be putting this on the table again. However, may I recommend NOT pouring all the sauce over the pudding (yes I know the instructions only say half, I thought I was being clever!) - it made it lovely and sticky, but a bit difficult to pick up to serve. Thanks for a fabbo recipe!

Hi. I live in Birmingham, England, famed for its chocolate and car manufacturing. Its a big multicultural city so getting most ingredients is not a problem, be them Turkish, Indian, Malaysian in origin, you can pretty much get it all somewhere. I am a vegetarian and check that everything I consume is vegetarian, which may get a bit annoying at people's houses and restaurants, but I need to make sure that no dead animals are eaten by me at all. I hate it when people respond to me telling them I am vegetarian by asking me if I eat fish! If I ate fish (or chicken, bacon, gelatin etc.) I would not be a vegetarian, but I guess a lot of people just don't get it. If it had to die, then its not for me! I always wanted to be vegetarian as a child, but its hard when your mom cooks for you and there is no leaving the table until your plate is empty. At around the age of 12 though she realised I was serious and was really good with accepting it then. She would always give me an alternative to the meat the rest of the family was eating, which must have been hard to do when catering for a family and working full time. So thanks for that, Mom. I am defintely vegetarian for moral/ethical reasons. I see no difference between humans and animals (well there is no difference humans are a type of animal ;-)), and cannot understand why we have pet cats, dogs rabbits etc. but are perfectly prepared to eat pigs, sheep and even other rabbits! My poor husband is not a vegetarian, but he doesn't get to eat meat very often, usually only if we eat out, though I do catch him cooking the odd burger now and again, and he seems to be able to add a slice of bacon to just about anything we cook. We do cook together most of the time, though I seem to specialise in soups/stews and him in cakes and sweet things in general - but then he is very sweet himself! I have a daughter who I am bringing up vegetarian. She loves everything I give her to eat so far, especially pudding, just like her Dad. She's still only tiny though so she'll probably hit a picky spot at some point soon. I know she'll have to make her own mind up about eating animals when she is old enough to, and I really hope she picks vegetarian, but it has to be her decision. I love Australia and went back for a third time on my honeymoon a couple of years ago.
