Vegemite Toad in the Hole

"Another Vegemite Recipe for those Vegemite lovers out there!! I did not use as much cheese as stated but have posted this (Kraft) recipe as written, but it doesnt get any more Aussie for breaky than this one."

  • 8 slices wholemeal bread
  • 20 g butter
  • 3 -4 teaspoons vegemite
  • 1 cup tasty cheese, grated
  • 4 eggs

directions

  • Cut a 5cm round hole from the centre of each slice of bread using a biscuit or scone cutter and reserve for another use such as breadcrumbs.
  • Spread one side of each slice with butter and Vegemite, then place buttered side up on a paper lined baking tray.
  • Sprinkle ¾ cup of the cheese over the bread then top each with another slice of bread. Crack an egg into each hole. Sprinkle over remaining cheese.
  • Bake in a hot oven 200°C for 15-20 minutes or until egg is cooked and cheese is golden. Serve immediately.

Scaled back for 1 serve for breakfast and toasted the rounds at the same time in anticipation of dipping them into a runny silky yolk but 10 minutes at 200C fan forced has fully set the egg yolk but was still moist and it still tasted fantastic so for my oven I know I need to cook for 7 to 8 minutes tops. Thanks Tisme made for Aussie/Kiwi Swap #75 April 2012.
