  • Preheat oven to 375 degrees F.
  • Heat a skillet over medium high heat. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon, leaving the fat in the skillet.
  • Add the onions, bell peppers, parsnips and garlic and cook until tender.
  • Add the thyme and season with salt and pepper. Stir in the spinach.
  • Transfer the mixture to a bowl with the reserved bacon. Allow to cool slightly.
  • Add the eggs. Stir well and transfer to a small casserole dish. Cover with foil and bake for 20 minutes.
  • Remove the foil. Sprinkle with cheese and bake until cheese is browned. Serve warm.
