- 4 slices bacon, chopped
- 1⁄4 cup onion, chopped
- 1⁄4 cup red bell pepper, chopped
- 1⁄4 cup parsnip, grated
- 1 garlic clove, minced
- 1 teaspoon thyme
- 3 cups Baby Spinach
- 2 eggs
- 1⁄4 cup parmesan cheese, grated
- salt and pepper, to taste
directions
- Preheat oven to 375 degrees F.
- Heat a skillet over medium high heat. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon, leaving the fat in the skillet.
- Add the onions, bell peppers, parsnips and garlic and cook until tender.
- Add the thyme and season with salt and pepper. Stir in the spinach.
- Transfer the mixture to a bowl with the reserved bacon. Allow to cool slightly.
- Add the eggs. Stir well and transfer to a small casserole dish. Cover with foil and bake for 20 minutes.
- Remove the foil. Sprinkle with cheese and bake until cheese is browned. Serve warm.
