  • Add potato, zucchini, carrot, celery, and scallions to slow cooker,.
  • Add stock and season with salt and pepper.
  • Cook on high 3-4 hours.
  • Just before serving, add creamed corn, cheese and parsley.
  • Serve when cheese has just melted.

  1. Nice soup for a chilly night! I liked that this didn't take too much preparation and that it was done in 3 hours. I spent about 20 minutes chopping the vegetables and it was clear sailing from there! I did add quite a bit more cheese than 1 cup, as it doesn't have a lot of flavor. That isn't a bad thing though, as all the veggies made it a nice, soothing soup. I felt like I was eating "stone soup", without the stone of course. Thanks for sharing!
