1 (16 ounce) package frozen spinach
¹⁄₄ cup butter, divided
salt
black pepper
2 cups potatoes, cubed, cooked
1 cup milk
2 cups cooked carrots
2 cups green beans, cooked
¹⁄₂ teaspoon paprika

directions

Preheat oven to 375 degrees. Lightly grease 4 quart casserole or roasting pan.
Cook spinach according to package directions, drain. Spread spinach in prepared casserole, dot with 1 tablespoon butter and season with salt and pepper.
mash potatoes with milk and 1/2 cup butter until creamy.
Layer half of potatoes, carroes, carrots and beans over spinach. Dot with another 1 tablespoon butter, season with salt and pepper.
Top with remaining potatoes. Dot with remaining 2 tablespoons butter and sprinkle with paprika. Bake 1 hour or until heated through and lightly browned.

They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
