  • Heat oil in a 4 quart pot over med heat.
  • add onion, garlic& chili powder.
  • Saute 5 minutes.
  • Add gree& red pepper.
  • Saute 5 minutes.
  • Add zucchini, Squash, oregano,& cauenne pepper.
  • Saute 5 minutes.
  • Add both cans of tomatoes.
  • Cook 10 minutes covered.
  • Stir in corn& black beans.
  • Cook 5 minutes.
  • Serve.
  • If desired serve with white rice, sour cream or shredded cheddar cheese.
  • 6 serving unless served over rice theni its about 10 servings.
