Veggies to use
- eggplant
- yellow squash
- pattypan squash
- zucchini
- small whole okra
- green tomato
- onion
- green pepper

Batter
- 1 cup flour
- 1 cup yellow cornmeal
- milk
- salt and pepper

Flour-cornmeal mixture
- 1 cup flour
- 1 cup yellow cornmeal
directions
- Cut veggies into strips or slices except for the okra; leave whole.
- Place vegetables in a bowl of cold water until ready to use.
- Meanwhile in a medium mixing bowl add one cup flour and one cup yellow cornmeal (non self-rising cornmeal) and enough milk to make a batter.
- Salt and pepper veggies and place in batter mixture.
- In a large plastic bag add one cup flour and one cup yellow cornmeal, shaking to mix.
- Add veggies a few at a time and deep fry in hot oil (375 degrees) until golden brown, about 2 to 3 minutes.
- Drain veggies on paper towel, serve hot.

I'm in the 50's something age range and have been married 31 years. I have two grown daughters, one dog, my hubby, and four cats who have taken up residency. I love crafts, flowers, shrubs, sewing, painting, cooking(as I cook daily)mostly from the way my mom taught me. Have been a domestic engineer for years now and still enjoy it. If I had a month off and with pay, I'd go to the beach and just enjoy the salt air and the sound of the ocean waves.
