  • Spray the bottom of a fry pan with non stick cooking spray.
  • Sautee veges over a medium heat.
  • Pour the beaten eggs over the sauteed vegetables.
  • Sprinkle the cheese on top.
  • Cover and cook on a low-med heat until cheese is melted and egg is cooked.
  • Remove from heat.
  • Let it cool slightly before slicing and serving.
  • Enjoy! :-).
