- 1 lb half cooked noodles
- 1⁄2 cup melted butter
- 2 slices bacon, cut into 1/2 inch pieces (obviously this is not a kosher kugel ,-)
- 1 tablespoon olive oil
- 2 medium potatoes, cubed (small)
- 1 medium carrot, grated
- 1 large onion, diced
- 1 garlic clove, crushed
- 5 eggs
- 2 cups light cream
- 1 -2 teaspoon salt and pepper, to taste
- 1 cup grated cheese, plus
- 1 tablespoon grated cheese
- 2 tablespoons chopped parsley (divided in half)
- 1⁄4 cup fresh breadcrumb
directions
- Mix melted butter with cooked noodles.
- Brown bacon till crisp set aside.
- Saute all vegies in bacon fat and 1 tablespoon olive oil till tender.
- Lightly beat the eggs, cream, pepper and salt.
- Pour over noodles and add the cooked vegies, 1 tablespoon parsley and 1 cup grated cheese.
- Put into a butter casserole dish.
- Stir 1 tablespoon parsley, cooked bacon, cheese and breadcrumbs together.
- Sprinkle on top of casserole.
- Bake 350 degree for 50 minutes.
- Cover if top gets too brown.

Made this for dinner last night .......delicious! I added more garlic, cause DH and me love that garlic...also I used more bacon......like CookbookCarrie said, it IS very filling, you really don't need anything else with this wonderful casserole, but I served it with a side salad........ wonderful meal Rita, I will be making this again, Thanx :-) :-)

Ooh, yummy! The only changes I did was I added mushrooms just before putting it in the oven, I added an extra carrot, I used ground turkey in stead of bacon and mixed it in the dish, and I didn't use any butter. I wished I had covered it for part of the time because I got some really crispy bread crumbs and noodles, but that was okay too. I will definately plan to make this again!

The first time I'd made a Kugel recipe but from reading the list of ingredients I was sufficiently inspired to double the recipe, so the quantities I was mixing then baking were huge! All very satisfying to stash away so many dinners in the freezer – for my parents. Such easy meals for them to take out of the freezer. And I just love this sort of recipe: SO versatile, a license to add a few extra ingredients, which I did. I added some leeks and some red peppers. I’m not sure what sort of noodles others have used, but the ones I used were the thin egg noodles usually added to stir-fries (they’re already cooked), so next time, to reduce the fat content, I’ll skip step one. Only after I had everything ready to go into the oven did I realize I was supposed to have sprinkled the bacon on top of the casserole. I’ll do that next time! The end result, despite my misreading of the instructions was excellent. I loved it and all the family members I served it to – including the hard-to-please-octogenarian-male – loved it! A delicious blend of flavours. A winter evening’s comfort food at its absolute best! Thank you, Rita, for another fabulous recipe!
