Vegetable Lovers Tagine

  • Heat the oil in a large tagine over medium low heat. Add the onion & garlic and cook until soft. Stir in the spices & cook until fragrant.
  • Turn the heat onto low & gently pour in 2 cups of broth. Next add in add the tomato paste, herbs, & all vegetables except for the garnishments & stir. Cover with the lid & cook for 45 minutes.
  • Check the vegetables to make sure they are tender, if not cook for additional 15 minutes, adding another 1/2 cup of broth or water if needed. Once tender, stir in the lemon juice & top with the green onions.

  4. What a great dish! I've made it twice now, once as written, once adding some preserved lemon. I lightly toasted coriander and cumin seeds and ground them for this--had fresh herbs and tomatoes from the garden--the aromas while it cooks are fabulous and the flavor even better! Another great one, Nasseh.
     
  5. Delicious flavors, and easy to prepare. I was running late so cooked it from start of prep time to finish in only 45 minutes, which wasn't quite enough time for it to really get thick. It was a bit soupy, but that was my own fault for cutting the time by half an hour, not the fault of the recipe. This made a lot of tagine, and easily can feed 6, more like 8 in my opinion. Wonderful meatless meal, thanks Nasseh.
