- 1⁄2 cup all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 egg
- 1⁄4 cup milk
- 1 cup grated carrot
- 1 cup grated zucchini
- 2 green onions, sliced
- 2 tablespoons oil
directions
- in a mixing bowl stir together the flour, baking powder, salt and pepper.
- In another bowl, beat together the egg, milk,carrots , zucchini, and onions.
- Add this to the dry ingredients and stir until combined.
- Using a large skillet, heat 1 tablespoon of oil over medium heat.
- Pour the batter by tablespoons into the pan, making a few pancakes at a time.
- Cook about 2 minutes on each side and golden brown.
- Add the remaining oil to the pan as needed.
- Serve immediately.

Brilliant! My daughter and I just had the most delicious hot lunch thanks to you. A few changes: I used wholemeal flour and subbed 1/4 tsp minced garlic to make up for the fact I had no onions. I steamed the grated veggies in the microwave for 2 1/2 minutes and patted them dry with paper towels (so they were a bit softer for my little girl). I also used white pepper instead of black. And just for fun, I added a 100g/4oz tin of salmon (drained). Yummy, easy, and healthy! The serving size is a bit of a joke ... this served one hungry mum and a hungry toddler (and the toddler ate the most!) :) Thanks for posting. This will be a regular in our house.
