- 1 1⁄2 cups brown rice (cooked)
- 16 ounces Egg Beaters egg substitute
- 3⁄4 cup fat-free evaporated milk
- 1 cup shredded low-fat cheese
- 3⁄4 cup chopped onion
- 3⁄4 cup chopped red bell pepper
- 1⁄2 cup chopped spinach
- 1 chopped tomato
- 3⁄4 cup chopped broccoli
directions
- Mix 2 tablespoons of Egg Beaters with rice.
- Spread brown rice along the pie pan as crust.
- Bake for 5 minutes.
- Combine all ingredients and add to crust.
- Bake for 40 minutes.
