Ingredients: 1 large zucchini, diced; 1 large yellow squash, diced; 1 large red onion, diced; 1 large red bell pepper, diced; 1 large green bell pepper, diced; 1 large carrot, peeled and diced; 1 large cucumber, peeled and diced; 3 large tomatoes, chopped; 3 tablespoons red wine vinegar; 1 bunch green onion, thinly sliced; 1 cup V8 vegetable juice; 1 tablespoon olive oil
