  • Heat the oil in a large skillet over medium heat.
  • Add the onion and cook, stirring occasionally for 5 minutes.
  • Add the garlic and ginger and cook for 2 minutes.
  • Add the curry powder, cumin, cardamom and cinnamon stick.
  • Cook stirring constantly for 30 seconds.
  • Add the tomato, coconut milk and salt and stir to combine.
  • Add the redskin and sweet potatoes and the carrots.
  • Cover and bring the mixture to a boil.
  • Reduce the heat to medium low and simmer until the vegetables are tender, about 20 minutes.
  • Remove and discard the cinnamon stick.
  • Serve stew warm.

  1. This was excellent. I didn't have any potatoes so I substituted with butter beans which tasted quite good. I might add a little more curry powder next time, and it took a while to boil so did not need the full 20 minutes of simmer time after. I think this would also be good served over rice.
