Vegetarian Fajitas

"My husband loves this dish, despite the fact that he is not a vegan. It is low in cholestrol also. I first found a similar recipe in a cooking magazine, but changed most of the ingredients as I do not care from yellow onions and green peppers. I also added a few ingredients, such as tomatos and mushrooms, as I wanted it to be a little more colorful."

  • Preheat oven to 375.
  • Layer first 7 ingredients in a 13 by 9 " pan.
  • Roast at 375 in oven for 45 to 60 minutes, depending on how you "done" you prefer your vegetables to be. Stir occasionally throughout cooking time.
  • Heat refried beans or black beans in a microwave. Place desired amount of beans on tortilla shell and top with vegetables.

I learned how to cook unhealthy traditional food from cookbooks my mom and grandmother used. After I got married I had the shock of my life when my husband, who is pretty young and active, was informed he had high cholestrol by the doc. Now I use recipezaar to search for low cholestrol foods that are good enough to serve for supper alone or supper with guests.
