  • Put garlic and onion in blender, pulse til chunky, then add tomatoes and blend just til pureed.
  • Add blender mixture, beans, rice, seasonings and salsa to a medium pot.
  • Cook for 30-45 minutes to allow flavors to meld.
  • Serve -- delicious 'as is', or top with sour cream, guacamole, grated cheese or whatever sounds great.
  • ENJOY! : ).
