Veggie Burrito Filling (Crock Pot)

ingredients
- 1 cup dried pinto bean, soaked overnight and drained
- 1⁄2 cup wheat berries
- 1⁄2 cup rye berries
- 1 onion, chopped
- 1 -4 garlic clove, chopped
- 1 (28 ounce) can crushed tomatoes (or 1 15 ounce can plus 1 can full water)
- 3 cups vegetable broth
- 1 -3 hot green chili pepper, chopped
- 1 -3 small dried red chili
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
directions
- Add all of the ingredients to the crock pot and cover.
- Cook on low 8-10 hours.
- I usually wait to season with cumin and chilli powder until it is time to eat, but you can probably add it all in at one time.

Good stuff! It's very filling, and very healthy, too. We couldn't find rye berries at the natural foods store, so we just doubled up the wheat berries. They added an interesting (good) texture to this. I've used this as a burrito filling, but I've also had a couple servings as stew. Thanks for sharing.

I was lazy, and used 1 can of chopped green chiles for the green chili pepper, and used crushed red pepper for the red. It was still very good. Even the three meat-lovers in my house thought it was pretty good. Although something I did made it too runny for burritos - we ate it like chili with onions & cheese.

I mean no disrespect, but since I have to diet I have to do it. I refuse to limit myself to recipes that already fit my diet and like the challenge of changing already existing recipes to be healthier. I will leave out the oil, leave out or replace the cheese and milk with a non-dairy alternative, and use whole grains. I will also leave out meat and broth and choose vegetarian, low sodium versions/alternatives. I still rate recipes that I make these changes to. <br /> <br />But, if I use a recipe as inspiration only- meaning I got a great idea from it but changed it all around- I generally will not give any stars but will put a little note stating what I did. I love to give credit where credit is due. <br /> <br />I don't deduct stars if I personally do not like an ingredient in the recipe. I don't make recipes that I think that I won't like, which is why you will probably notice that most of my ratings are pretty high. I think it is silly that people choose to make recipes that include ingredients that they don't like then rate them poorly saying "I don't care for..."
