ingredients

  • 2 cups cabbage, shredded
  • 1 cup squash, cubed (I used acorn)
  • 1 cup onion, sliced
  • 2 celery ribs, sliced with top leaves
  • 1 medium carrot, thinly sliced
  • 1 apple, cubed (granny smith works well)
  • 12 cup beef broth (low sodium)
  • 14 teaspoon salt
  • 12 teaspoon pepper, freshly ground
  • vegetable oil cooking spray

directions

  • Preheat oven to 325f degrees.
  • In a large bowl combine all ingredients; mix well. Pour into a veggie sprayed casserole. Cover and bake in preheated 325f degree oven for 45 minutes to one hour.
  • Remove lid for the last 10 or 15 minutes.

  1. We really like the squash and onions. The carrots and celery were okay. The apples were cooked away, but that's probably where a lot of the liquid came from. The cabbage added some bite. We were looking for a way to pack a lot of veggies, and this did it, it just didn't wow us. Chopping all of the veggies (and peeling the squash!) was time consuming, but this was very simple recipe.
     
  2. I was worried my husband would not like it because there is no meat and only vegetables. Well, he loved it and so did I. This dish has wonderful flavors. We served it over top of rice, yum!
     
  3. I love vegetable casseroles and this one turned out very well. My kids usually squawk about having cabbage but they didn't complain. The apple blended in well with the other vegetables. Thanks and will make this one again. Made and reviewed for the Australian/New Zealand recipe swap.
     
  4. This tastes and looks great, but the time is off. It needs to be in the oven longer or at a higher temperature. If at 325 degrees, then it should be in at least 75 minutes. I think this would be wonderful with sausage, I can just see putting in the oven with potato sausage. :yummy:
     
  5. I can't believe how terrific this is.... to be honest I was a little "iffy" about the apple..but I put it in there anyway.. I was a wee little bit short on the cabbage by about 1/2 cup how easy to make..how good to eat.. I shared mine with my neighbor she is 87 today and doesn't cook much anymore..we both enjoyed our lunch we had a large serving each + there was enough left for her to have another serving & another for me too..... I did peel the apple didn't add the salt (forgot it) maybe added more pepper this was a WONDERFUL dish don't be afraid of putting in the apple..it really adds something very flavorable dish.. my neighbors great granddaughter is a vegan..so I gave Vera a copy of this recipe and told her to tell granddaughter to use vegie broth instead of beef..should work well in my opinion ANYWAY this is WONDERFUL!!! and very healthy..and full of flavor

Tweaks

  1. This was so delicious, and smelled so good. Both the aroma and the taste was beyond excellent. I used red apple instead of granny smith and butternut squash, and it went well with the recipe. The next time I'll make this I'll use the acorn squash and the green apple.
