  • Preheat oven to 325 degrees. In a large skillet, cook broccoli, squash, onion and carrots in oil over medium heat 5-7 minutes or till crisp tender.
  • In a small bowl, stir together mayonnaise and 1/2 cup of the cheese. Stir into veggies.
  • Turn veggie mixture into lightly greased 2 quart casserole dish.
  • In a small bowl, stir together breadcrumbs, paprika, salt, pepper and remaining 1/2 cup cheese. Sprinkle over veggies. Bake 20-30 minutes or till light brown.

  1. This great recipe made a wonderful pairing with last night's roasted chicken. I couldn't find any yellow squash around here but everything else went in with a very tasty outcome. I can recommend this highly. :D
     
  2. I used butternut squash and cauliflower and threw in some diced ham. My mayo was flavoured with chili and coconut and this all worked wonderfully well. I used light rye bread for my breadcrumbs. It was a delicious savoury meal enjoyed by adults and teenagers . It is my favourite type of recipe as it provides a great blue print and great versatility
