directions

  • in a pot cook peppers, onion,garlic till tender.
  • add tomatoes,beans corn, chili powder, salt&pepper,cumin and rice.
  • bring to boil.
  • reduce and simmer for 30 minutes.

  1. I didn't give it any stars because I basically ripped the recipe apart. I don't like onions so I skipped those and instead of kidney beans I use pinto beans b/c that's all we had. I didn't add the rice (or water) because I thought it looked good without it! However, I think I will add rice next time and maybe try balck beans. I never ate regular chili because of all the hunks of meat in it, thanks for a good, basic vegetarian chili recipe! I can see many, many ways to change this up and make it different every time!
     
  2. This recipe needs a major overhaul! After simmering for 30 minutes with a lid on (even though directions do not indicate),the rice was still hard...added more water, and simmered another 1/2 hour. All in all I added probably at least 1 more cup of water,simmered for about an hour and ended up with a pot of mush! Also, 3 tablespoons of chili powder was way too much for my taste. I'm going to keep at this though...it has major potential.
