  • 2 (6 ounce) packages noodles, japanese chuka soba (chowmein)
  • 1 cup diced onion
  • 1 teaspoon ginger, grated
  • 2 garlic cloves, minced
  • 12 cup red bell pepper, diced
  • 1 (4 ounce) can canned mushroom slices, drained
  • 1 cup broccoli floret
  • 2 tablespoons canola oil
  • 1 tablespoon sesame seed oil, toasted
  • 4 tablespoons ketchup
  • 4 tablespoons soy sauce
  • 2 tablespoons apple juice
  • 1 tablespoon Thai sweet chili sauce

directions

  • Mix together the sesame oil, ketchup, soy sauce, apple juice and chili sauce in a small bowl and set aside.
  • Heat oil in a large heavy pan over medium high heat.
  • Stir in the garlic, ginger and onion. Add the other veggies and stir fry to desired doneness.
  • Cook the noodle according to package directions. Add to the stir fry along with the sauce.
  • Eat while fresh and warm.
