Meatloaf
- 1 lb ground turkey
- 1 medium carrot, shredded
- 1 small zucchini, shredded and squeezed dry
- 1 small onion, chopped
- 1⁄2 bell pepper, finely chopped (red or green)
- 1 teaspoon italian seasoning
- 2 tablespoons Worcestershire sauce
- 1 cup breadcrumbs
- 2 medium eggs
- 1⁄2 tablespoon sesame seeds

Sauce
- 2 cups water
- 1 (4 ounce) can tomato paste
- 30 ml sugar substitute (liquid) or 1/2 cup sugar
- 1⁄2 cup cider vinegar
- 1 1⁄2 cups celery, chopped
- 1⁄2 cup onion, chopped
- 1 teaspoon italian seasoning
directions
- Place all ingredients for the sauce into a sauce pan and bring the mixture to a boil.
- Reduce the heat to simmer, cover and cook for 2 hours.
- Preheat oven to 400 degrees.
- Spray a pan with nonstick cooking spray.
- Crumble the ground meat into a large bowl; add the shredded carrots, zucchini, onion and pepper.
- Add the Italian seasoning, sesame seeds, bread crumbs and Worcestershire sauce. Mix ingredients lightly with a fork until well blended.
- Form into loaf and cook uncovered for 60 minutes or until done.
- At the end of the cooking time, check the sauce for thickness.If the sauce is thin, thicken it with 1/4 cup cornstarch dissolved in cup of water. Serve immediately with Creole Sauce.
