Veggie Packed Turkey Meatloaf W/ Creole Sauce

"I found a recipe on the web and did some adjusting to suit our taste.Top with Creole Sauce for a fabulous main course! I serve with steamed vegetables & couscous. This makes for a low fat, healthy, good tasting meal!"

  • Place all ingredients for the sauce into a sauce pan and bring the mixture to a boil.
  • Reduce the heat to simmer, cover and cook for 2 hours.
  • Preheat oven to 400 degrees.
  • Spray a pan with nonstick cooking spray.
  • Crumble the ground meat into a large bowl; add the shredded carrots, zucchini, onion and pepper.
  • Add the Italian seasoning, sesame seeds, bread crumbs and Worcestershire sauce. Mix ingredients lightly with a fork until well blended.
  • Form into loaf and cook uncovered for 60 minutes or until done.
  • At the end of the cooking time, check the sauce for thickness.If the sauce is thin, thicken it with 1/4 cup cornstarch dissolved in cup of water. Serve immediately with Creole Sauce.
