“My family loves grilled cheese sandwiches and I am always trying to find ways to reinvent them. As a family we are also eating less meat and more veggies and this is a great vegetarian option. Feel free to add different veggies that sound good to you. The measurements are also flexible. I eye balled mine and went with my taste preferences. If you don't want to make the olive spread you can always buy a jar of tapenade from the store.”

Directions

  1. Grill veggies on preheated grill coated with cooking spray.
  2. In food processor combine olives, garlic, pesto sauce, olive oil. It can be as smooth or chunky as you like.
  3. Spread 4 pieces of bread with cream cheese and top with olive spread.
  4. Top the olive spread with the grilled veggies, cheese and second piece of bread.
  5. Grill sandwiches till bread is golden and cheese is melted.
