Veggie Quesadillas

"Looks like "junk food" but are a good way to sneak some veggies into your (or your kids) diet. Also great for game day. I make them for our poker parties or anytime we want a "good for you" snack."

  • Spray pan with cooking spray and heat.
  • Add all veggies except jalepenos and green onions and cook until tender, about 3-5 minutes.
  • Salt and pepper to taste.
  • Heat grill (or another frying pan) and spray with cooking spray.
  • Place tortilla in pan and fill one side with about 1/2 cup of veggies.
  • Sprinkle with cheese, jalepenos and green onions and fold empty half over.
  • Grill for aproximately 45 seconds to 1 mintute, depending on heat.
  • Flip and grill other side.
  • Remove from pan and cut.
  • Serve with salsa and sour cream if desired.

  1. Gosh I just saw this in my cookbook and forgotten to rate it. I tried this recipe 3 months ago and it was really good. Has to be the first time I made quesadillas that actually held together. I made it just as you said but I imagine if anyone wanted to add chicken it would fit right in.
     
  2. Kari, I really enjoyed this quesadilla! I used summer squash and carrots, sweet Maui onions and left out the bell pepper. I used sharp cheddar and salsa and sour cream to top. Yum! I had a delicious dinner! Thanks!
     
  3. Very easy to make and YUMMY to boot. We also added some fresh herbs for a different twist.
     
  4. I enjoyed this meal! I used less cheese, and fat-free tortillas.
     
  5. didn't have bell pepper or carrots so used mushrooms and more mushrooms instead. also used whole wheat tortillas. yum, yum, yummers. i'm off to try more 'kari in denver' delights

Tweaks

  1. we totally love this recipe. even the kids even ask for it.we have also added chicken to it but its wonderful without and wraped it up in a burrito instead. (easier to handle)
     
  2. This wasn't my first attempt at making quesadillas - but mine didn't hold together well. Other than substituting mushrooms for the summer squash, I followed the recipe exactly. I used low fat cheddar & whole wheat tortillas and served with home made salsa & light sour cream on the side. Next time, I'll add some herbs for flavour & tomato sauce to hold everything together a little better. Thanx Kari!
