ingredients
- 2 cups rice (your choice )
- 1 large carrot
- 1 large parsnip
- 2 stalks celery
- 8 sun-dried tomatoes
- 1⁄4 cup of sweet chili sauce
- 1⁄2 cup chipotle adobo sauce
- 2 teaspoons coconut oil, unflavoured
directions
- Make rice while getting rest of the ingredients ready.
- sautee onions and garlic in coconut oil.
- slice Carrots and Parsnip with peeler add to onions and garlic.
- slice Celery add to pan and stir.
- add sun-dried tomatoes , and Chipotle sauce.
- stir all ingredients together cove let simmer stirring occasionally.
- Put vegetables on bed of rice , drizzle with sweet Chilli sauce.
