  • Melt butter in large saucepan over medium heat; add flour and cook for a minute or two. Pour in chicken broth and bring to a boil.
  • Simmer over low heat for 8-10 minutes.
  • Add the cream and bring back to a simmer.
  • Add the dry sherry and season to taste with salt and pepper.
  • Top with homemade croutons and chives and serve.
