  1. Saute red pepper, green pepper, onion, and bacon in skillet until tender.
  2. Place potatoes into 13 x 9 greased baking pan. Add vegetables and cooked bacon once they are tender.
  3. In small saucepan, heat butter over low heat until melted. Add flour, salt, pepper stirring until smooth. Add 1 cup milk - heat till boiling, stirring constantly. Add shredded mild cheese and stir until melted.
  4. Mix cheese sauce to potatoe mixture.
  5. Bake 400 degrees for 1 hour until golden brown.
  6. Double the cheese sauce for extra creamy potatoes.
