  • Saute red pepper, green pepper, onion, and bacon in skillet until tender.
  • Place potatoes into 13 x 9 greased baking pan. Add vegetables and cooked bacon once they are tender.
  • In small saucepan, heat butter over low heat until melted. Add flour, salt, pepper stirring until smooth. Add 1 cup milk - heat till boiling, stirring constantly. Add shredded mild cheese and stir until melted.
  • Mix cheese sauce to potatoe mixture.
  • Bake 400 degrees for 1 hour until golden brown.
  • Double the cheese sauce for extra creamy potatoes.
