  • Mix rhubarb and 1/2 cup sugar and set aside.
  • Mix flour, 1-1/2 cups sugar, oil, egg, buttermilk, baking soda, cinnamon and vanilla.
  • Add to rhubarb mixture.
  • Pour batter into a greased and floured 9x13 pan. Bake at 350 degrees Fahrenheit for 1 hour.
  • Combine butter, coconut, brown sugar, milk, and chopped nuts in a pan cook for 3 minutes.
  • Pour over cake while warm.

  1. I don't bake because I don't like to bake, I love to cook so I had my DD make this and omg, 100 stars....and I may just start baking to make this again. This will be an annual favorite during rhubarb harvesting. I believe there is a couple more cups of buttermilk left to whip up some thank you cakes for family and friends. THANK YOU
