Victoria's Spaghetti Carbonara

- 6 eggs
- 2 cups heavy whipping cream
- 1⁄2 cup sour cream
- 1⁄2 cup parmesan cheese
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 teaspoon oregano
- 1 tablespoon parsley
- 1⁄2 cup onion, chopped
- 2 garlic cloves, chopped
- 1 lb ham (ham steak or whole ham)
- 1 lb spaghetti
directions
- Mix eggs, whipping and sour cream, cheese, spices, onion,and garlic in a bowl and set aside.
- Boil spaghetti in salted water to al dente.
- While the spaghetti is cooking, cube the ham.
- When the spaghetti is done, add the cream mixture in a little at a time.
- Mix in the ham.
- Top with some more parsley.

This was really good! I was concerned with the amount of eggs that it would set up like scrambled eggs but with the cream and sour cream it just helped to thicken the sauce. I think next time rather than adding the cold sauce to the noodles I will mix the sauce and ham in a sauce pan and heat through and then pour in with noodles. Will make again!! Made for Spring 2009 PAC.
