Vitamin Rich Potato Salad

"This potato salad has been made in my family since I remember my self. It's a great alternative to your mayo base potato salads. I have named it vitamin rich because It's using a whole bunch of parsley and lots of raw apple cider vinegar and delicious red onions. Hope you enjoy it as much as we do."

  • Place the first 6 ingredients in a large glass bowl (I avoid using metal because of the after taste) while you are prepping the potatoes.
  • Boil the potatoes with the peel. After potatoes are tender enough when pierced with fork, cut potatoes into 2 inch cubes. Mix them with the marinade and let them sit for at least an hour . Every one has a different taste towards saltiness and sourness, adjust vinegar and salt according to your. Enjoy!
