- 1 shallot, minced
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 2 (14 1/2 ounce) cans diced tomatoes
- 1 (8 ounce) can tomato paste
- 1⁄2 cup red wine
- 2 teaspoons red pepper flakes
- 1⁄2 cup unsalted butter
- 8 ounces prosciutto (sliced)
- 2⁄3 cup vodka
- 1 cup heavy cream
directions
- Heat Olive oil over medium high heat in sauce pan.
- Add minced shallot and garlic and sautee for 2 minutes.
- Pour juice from the tomato cans into the pan.
- Pour drained tomatoes into food processor and pulse for a few seconds.
- Simmer for 3-5 minutes before adding pulsed tomatoes.
- Add tomato paste.
- Turn heat down to a simmer, cover, and let cook 30 minutes.
- Add wine and red pepper flakes to taste. Let simmer 20 minutes.
- Start pasta water with salt and oil.
- Add butter to large sauce pan and melt over medium heat.
- Add in proscuttio and sautee until lightly browned.
- Pour in vodka and let evaporate about 10 minutes.
- Mix in marinara and cream. Let simmer 10 minutes.
