  • Heat Olive oil over medium high heat in sauce pan.
  • Add minced shallot and garlic and sautee for 2 minutes.
  • Pour juice from the tomato cans into the pan.
  • Pour drained tomatoes into food processor and pulse for a few seconds.
  • Simmer for 3-5 minutes before adding pulsed tomatoes.
  • Add tomato paste.
  • Turn heat down to a simmer, cover, and let cook 30 minutes.
  • Add wine and red pepper flakes to taste. Let simmer 20 minutes.
  • Start pasta water with salt and oil.
  • Add butter to large sauce pan and melt over medium heat.
  • Add in proscuttio and sautee until lightly browned.
  • Pour in vodka and let evaporate about 10 minutes.
  • Mix in marinara and cream. Let simmer 10 minutes.
