Waffle Cinnamon French Toast

"Just a little twist on the traditional French toast, using waffles instead of bread. Use as much or as little cinnamon and Splenda as you'd like."

  • Heat the waffles in the microwave, about five or ten seconds on each side. You want it to be mostly defrosted, but not totally hot.
  • Whisk the egg white and soymilk in a small bowl, and add cinnamon and Splenda to taste.
  • Dip each waffle in the egg mixture, making sure to get the egg into the nooks in the waffles. Sprinkle each side of the waffles with some more cinnamon and sugar, and cook over medium heat in a nonstick pan sprayed with cooking spray for about five minutes, or until nicely browned.
  • Sprinkle with more cinnamon and Splenda to serve, if desired.

  1. This was a good and easy way to make french toast. Made as is except add a couple drops of vanilla. Made for Fall 2009 PAC.

I also struggle with anorexia, and so most of the recipes I create or try are low-calorie and fat-free. I do love to bake, though, and I'm able to do that for others right now, which is nice. I also keep kosher; that, combined with the fact that I don't really eat meat or cheese, means that most of my recipes (or recipes that I try) are non-dairy and vegetarian, or can be easily adapted to suit that. Kitchen gadgets are a horrible weakness of mine ... it is just so much fun to try out crazy new products that sometimes I can't help myself! Limited kitchen storage space has managed to sort of curtail that little habit.
