Waffles

"The cinnamon and pecans really give this waffle a decadent flavor, and the egg whites keep it light and fluffy. It's a little bit extra work than your typical waffle recipe. If you're serving breakfast for guests (especially over the holidays) or want to make someone's birthday extra special--this is a great waffle. I found it in Southern Sideboards/Southern Living Hall of Fame, Recipes from the Junior League of Jackson, Mississippi. It was posted by Mrs. Ewing Seligman, Los Angeles, CA."

  • Mix egg yolks in bowl with sour cream.
  • Sift together flour, salt, sugar, baking powder, and soda.
  • Blend sifted ingredients in with eggs and cream.
  • Add oil, cinnamon, nuts, and vanilla.
  • Beat egg whites until stiff and fold in gently.
  • Bake in waffle iron.
  • Will keep in warm oven on open racks.
  • Freeze in plastic bags (if you actually have any left).
