Wake up Casserole

"My four kids went to visit my aunt and uncle in Wisconsin and came home ranting and raving about this great breakfast! I convinced my aunt to send the recipe and it is so easy and yummy! Also so easy to adapt to whatever you have in the fridge, onions, mushrooms, broccoli, sausage, etc!"

  • Place hash brown patties in 13x9 greased casserole.
  • Sprinkle with cheese, and ham.
  • In a bowl, beat eggs, half-and-half, salt and mustard well.
  • Pour over ham.
  • Sprinkle with pepper and bacon if desired.
  • Cover.
  • At this point it can be refrigerated and baked in the morning.
  • Bake at 350°F for 45 minutes covered, (I have have baked at 400°F for 30 minutes also).
  • Uncover and bake additional 15 minutes or longer until edges are golden brown and knife inserted in center comes out clean.
  • Cool slightly and cut around the hash brown patties to serve.

  1. My friend discovered this recipe. I have made it countless times as specified. I recently made it for a Retirement party at work. It was a hit. I was asked to send the recipe. I always make it up the night before and bake in the AM. You can try adding 3/4 fresh salsa to the top right before baking. It gives it a nice color and added flavor depending if you use mild or hot.
     
  2. Nice recipe. I made about a half batch. in a 10 inch round pan. I used skim milk instead of half and half and skipped the ground mustard as well but it still came out quite delicious.
     
  3. A nice hot breakfast. I did use the optional bacon, but halved the amount. I like to mix cheeses, too, so I used cheddar and swiss. It tastes great, but maybe could use some onion and/or herbs. I'll make this again and add some of my own extras. Thanx for sharing!
     
  4. Breakfast? We had this for dinner and we loved it. I also loved how quick, easy and versatile it is...I used a cheddar/jack cheese mix, sprinkled mushrooms along with the cheese and ham, used fat-free 1/2 & 1/2 and added a couple shakes of Tabasco to the egg mixture. I didn't use the bacon (didn't have any). I put this together in the morning, we did our running around and threw it in the oven for dinner. Wonderful. Served it with a green salad and had leftovers for the next day, which re-heat well in the microwave. Thanks Laurie, this recipe earned a spot at the cabin :)
     
  5. Made this for dinner the other night and my husband loved it. I didn't make any changes other than I added some sausage. Very easy and tasty - thanks for sharing a great recipe which I will make again in the future.

It would most likely be made again, many times! <br /> <br />4 STARS....This recipe was good, we liked it but I made changes either in taste or it was not clear in something, but I would consider making it again. <br /> <br />3 STARS....This recipe was not something that got approval from the majority. Either it just didnt work in preparation, directions, or taste.
