- 4 cups all-purpose flour, divided
- 1⁄4 cup sugar
- 2 teaspoons salt
- 4 1⁄2 teaspoons active dry yeast (2 envelopes)
- 1 1⁄4 cups beer
- 1⁄2 cup oil
- 2 eggs
- 3⁄4 cup chopped walnuts
directions
- Combine 1 1/2 cups flour, sugar, salt and yeast in a large bowl and blend well.
- Heat beer and oil together in a small sauce pan until warmed (110° F.).
- Add to flour mixture.
- Mix in eggs and blend at low speed until moistened, then beat 2 minutes at medium speed.
- By hand, stir in walnuts and enough of the remaining flour to make a stiff batter.
- Spoon into two well-greased 8"x4" loaf pans.
- Cover loosely with greased plastic wrap.
- Let rise in a warm place until doubled in size, about 30-40 minutes.
- Preheat oven to 375°F.
- Bake 20-30 minutes, or until golden brown.
- Remove from pans immediately and cool on wire racks.
