Directions

  1. Preheat oven to 350.
  2. Put 1 T olive oil and garlic in saucepan over medium heat.
  3. Saute 2 minutes then add grape tomatoes.
  4. Turn tomatoes to coat with oil.
  5. Add sherry, toss to coat tomatoes.
  6. Place pan in oven and roast for 15 minutes.
  7. Toss spinach and arugula with 1 T olive oil. Pour roasted tomatoes over greens and season with salt and pepper.
