Warm Red Cabbage Salad

  • 34 cup walnuts
  • 2 teaspoons oil, walnut preferably
  • salt and pepper
  • 1 head red cabbage, finely shredded or sliced
  • 1 red apple, peeled,cored,and cut into julienne
  • 1 clove garlic, finely chopped
  • 2 tablespoons balsamic vinegar
  • 2 12 tablespoons olive oil
  • 1 red onion, quartered and thinly sliced
  • 4 ounces goat cheese, crumbled in large pieces
  • 1 tablespoon chopped parsley

  • In a 350 degree oven, toast the walnuts that have been tossed with the oil, salt and pepper.
  • Bake for about 5-6 minutes, being careful to not let them burn.
  • In a large saute pan or skillet over medium high heat, add the vinegar, garlic and oil.
  • As soon as they are hot, add the onions and cook for only 30 seconds or so.
  • Next add the cabbage and cook for just about 2 minutes, stirring continually, until color changes from bright purple to pink.
  • Season with salt, pepper and a dash more vinegar.
  • Remove the wilted cabbage to individual salad plates and top with the apples, walnuts, goat cheese, and herbs.

  1. Superb salad! Hot, cold, crunchy, soft, sweet, tangy, smooth and crisp. This cabbage dish has it all, and to top it all off, it's gorgeous to look at. I LOVED this!
     
  2. My husband was told to eat purple food ny his doctor. Had all the ingridents so I tried. We loved it! The only thing is I did half and used red wine vinegar instead of balsamic because thats all I had.
     
  3. Wonderful! I made a switch based on what I had in my fridge but the end result was still delicious! I didn't have apples, but I had some prunes. I also chose to cook the onions for a few minutes longer. The combination of the red cabbage (I cheated here as well, I picked them up at the grocery store, ready chopped!), the goats cheese, the walnuts and the sweetness of the prunes, was wonderful. I was happy to eat this as a complete meal (my DH saw this as a side dish!!) but it has risen to the top of my easy but delicious "worthy of a dinner party" side" dish list!
     
  4. What a great combination! So pretty and colorful, too. I loved how the warm cabbage sort of melts the creamy goat cheese. This a perfect way to showcase cabbage in a salad other than the usual coleslaw. Thanx for posting this!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
