  • Saute onion and garlic in butter 1 minute.
  • Add shrimp; cook for 2 minutes.
  • Stir in broth and seasonings.
  • Bring to a boil.
  • Reduce heat and simmer for 4 minutes.
  • Place greens on plates; top with shrimp mixture.

  1. This is such a simple, yet impressive salad! Loved the herbed dressing. Since the shrimp are already cooked, I added them during the last 4 minutes of simmering to avoid them getting rubbery. I served this over baby spinach. Definitely an elegant salad that guests will love. Thanx for sharing!
     
  2. Inez....great shrimp salad. I had a challenge when I wanted to cut it down to one serving. Here is what I did. I used 1/4 lb. shrimp and kept all the other ingredients the same. I figured if I had some dressing left over I could use it.. This salad rocks! The flavors are really fabulous together, the plate looked beautiful and elegant. It made a great evening entree for me. Thanks so much for sharing your wonderful recipe! Love~~

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
