- 9 ounces chicken breasts, cut into strips
- 3 tablespoons white wine vinegar
- 1 tablespoon olive oil
- 2 teaspoons Dijon mustard
- 1⁄2 teaspoon sugar
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon paprika
- 1⁄8 teaspoon pepper
- 4 cups fresh spinach, torn
- 10 cherry tomatoes
- 1⁄2 cup shredded carrot
- 1⁄2 cup jicama or 1/2 cup water chestnut
- 1⁄4 cup radish, sliced
directions
- Whisk together; vinegar, oil, mustard, sugar, salt, paprika, & pepper. Pour into a zip lock bag, add chicken, & marinate for 2-5 hours. In a large bowl combine rest of ingredients. Drain chicken & stir fry till done. Add remaining marinade & heat till boiling. Pour hot chicken mix over salad, toss, & serve immediately.
