Wasabi Cucumber Salad

  • Mix the wasabi with 1/2 teaspoon warm water in the bottom of a mixing bowl and let it stand for 5 minutes.
  • Peel the cucumbers, cut each one in half lengthwise, and use a melon baller or spoon to scoop out the seeds. slice thinly widthwise.( if using english hothouse just cut in half lengthwise and slice thinly).
  • Add the vinegar and sugar to the wasabi and whisk until smooth.
  • Whisk in the sesame oil, salt and pepper. Just before serving, add the cucumbers, green onion, and sesame seeds to the dressing and mix well.

  1. Very nice, I cut the sesame oil in half (I thought it was fine with that amount and feared much more would be overpowering) and added just a splash of low sodium soy sauce. I just love a summer salad (so flavorful, btw) that won't spoil in the summer heat like a mayo based salad will. Thanks for sharing!

  4. OOPS!!! Having just come back from a grueling 3 hour workout at the YMCA, I began throwing this recipe together to go with leftover brisket from this past Memorial Day Weekend. The key words here are: grueling workout & throwing. I was waaay too tired to try a new recipe. I wanted to triple the recipe & so should have used 4.5 TEASPOONS of Wasabi powder. Er, uh, hmmm would you believe 4.5 TABLESPOONS of Wasabi??? By the time I had the liquid mixed I realized I needed a great deal more veggies & began adding whatever I could find in the refrigerator. Orange & yellow bell pepper look terrific in this salad. More green onion? You bet! How about a Mexican jicama? Yep. Carrots? I have a suspicion that many other things would go well with this. Maybe frozen green peas? I may add that tonight. Needless to say, I have a HUGE salad. ROFL!!! And to top it all off, this stuff is TERRIFIC!!! Chia-girl, what a marvelous recipe. Thanks for posting it. I will make it again & again. Just in smaller quantities!!! 5 stars for the recipe. 1 star for the tired cook 8-P!!!

  1. Wow was this ever good ! My DH loves wasabi I only had one cucumber and I needed a salad so I seeded a tomato, sliced it thin and cut it into smaller pieces before adding. I also subbed 1/2 of yellow onion for the scallions. It was a really good dressing and next time I will up the wasabi as well because hubby likes it strong. It's a keeper. Thanks!

<p>latest update, as all my fb friends know i have been very ill for the past 4 mos, but now i am on the road ro recovery. i've had 2 surgeries and broke nt elbow a week after the first one, which basically incapacitatedme forr 2 mos. happy to say i am doing pt, anf will hopefully be able to cook again</p> <p>i stopped working so i could spend more time in my fla house renovating, but this was a minor setback, going to do the bathrooms this summer.</p> <p>&nbsp;</p> <p><br />in NY i used to have an (at home) jewelry business, but i incorporated it into the store's gift dept., they sell it for me now. <br />cooking is my passion, my hobby, my relaxation, but i love going out for a good meal anytime. being born and growing up in manhattan, ny gave me the opportunity to try many new foods over the years, in many great restaurants. and travelling with my dh enlightened me to the wonderful ingredients and cuisines of san francisco, among other places. <br />the new corporate spouse deal is to do a day of cooking lessons/lunch, and shopping, so i have seen demo classes in ft lauderdale, san antonio, atlanta in the past few years plus taken a few cooking classes in chinese dim sum and noodles in joseph poon's, in philly. <br />several years ago i had the pleasure of being on several of the food network shows, ready set cook and taste test, which was like food jeopardy. i didn't win either, but it was so much fun!
