Washington Apple Cake

"My mother in-law gave me this recipe this past Christmas. The cake is wonderful and the icing well lets just say it takes the cake!"

  • Butter a 9x13" cake pan and set aside.
  • In a large bowl, beat eggs at high speed until thick and light in color.
  • Combine sugar and oil and beat into eggs.
  • Stir together flour, cinnamon, baking soda and salt.
  • Add to egg mixture along with vanilla.
  • Stir in nuts.
  • Spread apple slices in bottom of buttered cake pan.
  • Pour batter over apples, spreading to cover.
  • Bake at 350 degrees 1 hour or until top is pale golden and apples are cooked.
  • Remove from oven.
  • Cool cake in pan on wire rack.
  • When completely cool top with cream cheese icing.
  • Cream Cheese Icing:.
  • Beat cream cheese until fluffy.
  • Beat in 1/4 c melted butter.
  • Stir in 1-3/4 c confectioners sugar and 1 tsp lemon juice.
  • Spread over cooled cake.

  1. What a great cake, it made a large, tall, semi dense, very flavorful cake. I did omit the nuts because of dh's allergy. I agree the icing makes the cake, it takes it somewhere special, making every mouthful a treat. I used 1 tsp of soda as there was no amount listed. I loved that the apples were on the bottom of the cake. I used a combination of granny smith and pink ladie apples, they worked beautifully in this cake. Thanks for sharing this special recipe.
     
  2. Wonderful cake!! This cake is so good! Makes a huge cake that would be wonderful for a large gathering. My family are all enjoying the cake now and I'm dropping over some for my elderly parents soon. Easy and baked up perfectly. I used a pyrex baking dish. I only had smallish 'gala' apples....so used seven of them. Baking soda is mentioned in the recipe...but not listed in the ingredient list- I used two level teaspoons of baking soda which seemed perfect now that the cake has turned out brilliantly. I think I should have used a sieve on my confectioners/icing sugar...so sprinkled some extra chopped pecans over the top for decoration. This cake is a keeper and might even be made gluten-free next time round. Photo to be posted also
     
  3. I've been making this cake since I got the recipe from Women's Day magazine in 1982. Still my very favorite cake ever! (and I'm a chocoholic!)
     
  4. I first had this cake at a german restaurant near us and it was and is my all time favorite. I'd looked for a recipe for it for years and was thrilled to find this and even more so when I made it and tasted it. I've been making it for over 6 years and the two changes were cutting the sugar to 1 cup and making it half regular and half brown sugar. The apples I mix granny smith and any other sweet-crisp baking apple which I add a tablespoon of lemon juice to along with cinnamon and sugar and let them marinate 15 -30 minutes (or in the refrigerator if I do the night before) 1 tsp of baking soda is perfect.

I am blessed with a wonderful dh and four fantastic, crazy children. I am a stay at home mom who works from son up till son down.
