Watercress Soup

  • In a soup pot, at low heat melt the butter.
  • Add the leek and cook until it begins to soften.
  • Add the pear and cook covered for few minutes also until tender.
  • Add the watercress, vegetable stock and continue cooking for about 10 minutes.
  • Season with salt and pepper.
  • Pour the cream and puree in the blender.
  • Add additional salt and pepper to taste and serve with a piece of country bread if desired.

I can have tea time in my own kitchen, and be back in England the moment I heat the water, make the finger sandwiches, and set the napkins on the table.</p> <p>I started my blog because I want to be everywhere in the world at once. I recreate the places I want to transport myself to. These small moments turn an ordinary day into a miniature party or a tiny, quick vacation from within your own home.</p> <p>Celebrations always bring old friends closer and invite new ones. They reunite me with the families, friendships, places, and moments I have left behind. Our histories, memories, and senses are awakened in the kitchen, and we can share stories, bites, and laughter at the table.</p>
