Watermelon Cucumber Salad

"I found this recipe in the June 2010 Food TV Magazine...it may sound like an odd combination, but the flavors work really well together. It's a great salad for hot weather. All ingredient amounts are approximate...add more or less of any one thing to taste."

  • Soak 1/2 thinly sliced red onion in cold water.
  • Pat dry 4 cups diced watermelon and the 1/2 diced cucumber; toss with the thinly sliced mint.
  • Drain the onion, squeeze dry and add to the salad.
  • Add the olive oil and lemon juice; season to taste with salt and toss.
  • Just before serving toss in chopped cashews and sprinkle with crumbled feta cheese.
